Storing Sourdough: Why the Fridge Is the Wrong Place

Sourdough keeps longer than ordinary yeast bread – that's chemistry, not marketing. But you can throw that head start away fast: with the wrong spot, the wrong wrapping, or simply by cutting into the loaf too early. Here's what actually works – and the one mistake almost everyone makes.

Why sourdough keeps longer than yeast bread

A sourdough starter isn't just yeast – it's mainly lactic acid bacteria. They produce lactic and acetic acid, and those bring the pH of the dough down noticeably. In that acidic environment, mould spores have a much harder time taking hold, which is why a fresh sourdough loaf stays good noticeably longer than a comparable yeast-raised one.

Exactly how long? There's no honest single number. Four to five days at room temperature before a loaf turns properly stale is a rule of thumb, not a measurement. It depends on the flour (wholegrain holds moisture better than white wheat), on the hydration, on how thick and dark the crust is baked, and on your kitchen. A loaf in a humid summer kitchen behaves nothing like one in a dry winter flat. So treat four to five days as a ballpark – your bread will tell you the rest.

1. Don't cut into it straight away

The most common mistake happens before storage even starts. A loaf coming out of the oven isn't finished: the crumb is still setting, the gelatinised starch is stabilising, and excess steam is leaving the loaf in a slow, controlled way. Cut too early and all that steam escapes at once – the crumb turns gummy and clumpy, and the bread dries out faster afterwards.

So let the loaf cool completely on a rack until it feels cool to the touch. Two hours is a sensible minimum; a big, darkly baked loaf may want longer. Yes, this is the hardest rule in the whole article.

2. Cut side down, on a wooden board

The oldest trick is still the best one. Stand the cut loaf face down on a wooden board. That seals the one place moisture can escape from – the cut surface. The rest of the loaf has been protected all along: by the crust. It's the packaging the bread brought with it out of the oven – dry, firm, and still breathable.

For the first day or two you need nothing else. No wrap, no box. Just a board, the crust, and gravity.

3. A bread bin or a bread crock

If a loaf is going to last you more than a couple of days, the classic answer is a wooden or metal bread bin, or a stoneware crock. The principle: it slows the exchange of air without stopping it. Enough moisture stays inside to keep the crumb from drying out, and enough escapes that condensation never builds up.

One thing people forget: clear out the crumbs regularly and wipe the bin dry. Old crumbs hold moisture, and that's exactly where the next loaf starts to go off first.

4. A beeswax wrap as a breathable cover

There's a gap between "open on the board" and "shut in a bin": the half loaf going out to the garden for breakfast, the bread sitting in a basket, the piece you're taking to a friend's place. That's where a beeswax wrap earns its keep: fold the loaf in loosely, the wrap covers the cut face and moulds to the shape with the warmth of your hands – and it lets the bread breathe. For big loaves there's the XXL size at 40 × 50 cm, which wraps a rustic country loaf whole.

Honestly though: a beeswax wrap won't make bread keep longer than it naturally would. It isn't a miracle cover – it's a breathable one, and that's the whole point. It slows drying without leaving the loaf sitting in its own moisture. A sealed plastic bag can't do that, which brings us to the next point.

5. Why a plastic bag ruins the crust

A plastic bag is airtight. That sounds like what you want – for bread, it's precisely wrong. The moisture travelling out of the crumb has nowhere to go. It condenses on the inside of the bag and gets soaked straight back up by the crust. You know the result: a crust that's leathery and chewy by day two instead of crisp. And because that moisture just sits there, it makes life easier for mould, too.

In short: anything that seals bread airtight is working against the crust. Bread wants to be covered, not locked up.

6. The classic mistake: the fridge

And now the myth that refuses to die. The fridge feels right – cool, dark, surely it makes everything last. For bread, it's the worst place in the house.

The reason is retrogradation: the starch that gelatinised during baking slowly recrystallises, and the crumb turns firm and dry – what we call going stale. That process is temperature-dependent, and it happens fastest in exactly the range your fridge lives in, peaking at around 7 °C. Put plainly: bread goes stale faster in the fridge than it does at room temperature on the counter. You get the opposite of what you were going for.

To be fair: in really warm, humid weather, the cold will hold mould off for a while. You pay for it with a crumb that ages faster. If you genuinely need to store bread longer, there's a better route – and it goes in the other direction.

7. Freezing – the only way to actually stop the clock

Freezing works because it skips retrogradation entirely: at −18 °C, the starch recrystallisation effectively comes to a standstill. The bread doesn't age more slowly – it barely ages at all.

  • Sliced, if you want a slice at a time – they go straight from the freezer into the toaster.
  • Half or whole loaves, if you want a proper loaf back on the table later.
  • Freeze it fresh, not once it's already three days old. You're freezing the state the bread is in right now.

To bring it back, take the loaf out of its wrapping, let it thaw at room temperature, then refresh it for 10 to 15 minutes at around 175–200 °C. Something rather nice happens in there: heat reverses part of the retrogradation, the crumb softens again, and the crust turns crisp a second time. A loaf out of that oven comes surprisingly close to a fresh one.

One honest note on beeswax wraps: for freezing over weeks, they're the wrong tool. A beeswax wrap is breathable – and in the freezer that's the last thing you want, or the loaf dries out at the edges (freezer burn). Use a properly airtight tin or bag instead. The wrap does its job at room temperature, not at −18 °C.

And if it does go hard on you?

Then it isn't ruined – it's a different ingredient. Stale sourdough has never been waste in a German kitchen; it's a starting point: croûtons, bread dumplings, panzanella, French toast, breadcrumbs for coating, bread soup. The crust that annoyed you yesterday is suddenly the best thing in the pan once it's been toasted.
